The smoked salmon plate was exquisite. Two generous whorls of salmon, as finely tatted as lace, were the same burnished apricot hue as the walls of the dining room. The centerpiece of loosely curled fillets rose into hollow hills, their slopes dressed with a crop of young, hand-nurtured herbs and a sparse forest of capers, on one side gentling into a ploughed field of crustless, pumpernickel toast points that were so uniformly browned an English butler couldn’t have found fault.

And certainly not because he’s been on TV. But because he’s a true visionary who’s created yet another immensely interesting and highly original restaurant using flavors that are for the most part familiar.
